With summer rolling in, I’m all for low-cook recipes that come together with minimal effort and maximum flavor.
Today’s peanut and cucumber salad in a tempered dressing fits the bill perfectly.
Diced cucumber, fresh green mint and cilantro are seasoned and dressed in a warm tempering of peanuts, spices and an optional touch of grated coconut, to create a refreshing summer salad with limitless serving possibilities.
