This quintessential Indian street food is also made in many homes as a heavy snack or light meal, and generally gets served as ‘Vada Pav’ wherein the potato dumpling is placed burger-style in a bread roll, smeared with a special dry garlic chutney.
Try this recipe for Dry Garlic Chutney by Show Me the Curry (this chutney can be spicy due to the red chilies; only a more acclimatized spice palate should try it.)
In today’s recipe for a perfect weekday meal or an ideal brunch serving, we’ve added an interesting twist to the delightful Batata Vada by mixing healthy kale (spinach works well too) into the mashed potatoes, along with a lighter hand on the spices for a more family-friendly outcome.
These amazing gluten-free potato and kale dumplings are then coated with a thin batter of seasoned chickpea flour/besan and baked to golden perfection.
