‘The Indian-inspired Grills & Kebab Series’ brings you a midsummer special; an easy and light Shashlik- style Shrimp and Vegetable Kebab. Shashlik, a term used for meat and vegetables marinated in spices and grilled on skewers, are popular across Asia and Eastern Europe.
Does anyone here really feel like working over a hot outdoor grill in the middle of summer? Count me out; the 100F plus days in Texas are keeping me far away from any heavy cooking or grilling.
So today’s recipe is our Indian-inspired ‘quick grilling’ and lighter take on Shashlik using shrimp instead of the traditional Shashlik meats like lamb and chicken. We make a simple skewered grill of shrimp and light summer vegetables like zucchini, bell peppers and red onions; marinated in a signature warm olive oil marinade with herbs and spices like the homemade garam masala we worked on last week.
This delicious mid-summer meal of Shashlik-style Shrimp and Vegetable Kebab is best served over lemony thyme flavored Orzo pasta.

Lemon-Thyme Orzo Pasta
½ lb Orzo pasta
3 tablespoons extra virgin olive oil
2 tablespoon lemon juice
2 tablespoon chopped thyme leaves
1 garlic clove, finely chopped
1 teaspoon salt (to taste)
1 ¼ teaspoon cracked black pepper
¼ cup cranberries
Prepare the orzo pasta as per the directions on the packet.
In a bowl, make a dressing with extra virgin olive oil, lemon juice, thyme leaves, garlic and seasonings. Add the cranberries and hot cooked pasta to the dressing, mix well. Serve as a bed for the Shrimp and Vegetable Shashlik or as a light summer salad.
Accompaniments & Serving Ideas:
